Cheesy Stuffing Cups

A few years ago I came across a recipe for Cheesy Stuffing Cups in the Kraft Foods Magazine. I had a holiday pot luck to go to and tired out the recipe, I have been making them every year since! These stuffing cups are so good! They are great for pot lucks because, just like muffins, they are single serving size! The (tiny) pic below is of the ones I made this morning for my daughters Thanksgiving Feast at school. I ended up going to Target last night and got 2 mini muffin trays and made Mini Stuffing Cups! They turned out just as good and they were bite size! I actually doubled the recipe to fill two mini muffin trays!

Here is the recipe:

You Need:

1/4 cup (1/2 stick) butter
3/4 chopped celery
1 1/2 cup water
1 pkg (6 oz) Stove Top stuffing mix for Chicken
1/3 cup dried cranberries
1/4 cup Planters Walnut pieces (I do not use these when I make them)
1 1/2 cup Kraft shredded cheddar cheese, divided
1 egg, lightly beaten.

Preheat oven to 350 degrees. Melt butter in a large skillet on medium heat. Add celery; cook and stir 5 min or until crisp-tender. Stir in water. Bring to a boil. Remove from heat. Stir in stuffing mix, cranberries and walnuts. Add 1 cup of the cheese and the egg; mix lightly.

Spoon stuffing mixture evenly into 8 (or however many you want) greased medium muffin cups, mounding mixture as necessary to use all the stuffing mixture. Sprinkle with remaining 1/2 cup cheese.

Bake 10 min or until stuffing cups are heated through and cheese is melted.

Tip: Don't have a muffin pan? Simply spoon stuffing mixture into muffin pan liners instead. Place on baking sheet and bake as directed!

Let It Snow!!

To our amazement it snowed for the first time last night!! It was awesome! Savannah bundled up and went and played for just a few min while the large beautiful snowflakes fell!



And this is the sight we woke up to this morning!!

Scarlett was only outside for a few min and then enjoyed watching sister play outside with her friends.....

They ended up going sledding for a bit and Savannah went by herself a few times as well as with her friends! She had a blast!

The snow is already melting and will be gone soon, but it's a nice little winter wonderland while it lasts! =)

Halloween 2010

This year for Halloween I choose not to make the girls costumes. I was a bit overwhelmed with orders and just life in general so I knew trying to make costumes would just put me over the edge! lol! So while shopping at the Carter's store we picked up a cute little witch costume for Savannah and a, go figure, cow costume for Miss Scarlett!

o our first Trick or Treating event at the mall! We actually hit two malls on two days! Savannah had a blast and Scarlett was awesome!

Scarlett and I set up on the porch to pass out candy. Trick or Treating started at 6 and by 6:40 I was on the phone with Shawn asking him to come back home because it was SOOOO COLD! It was also starting to sprinkle. Once Shawn got back he took Scarlett inside and I bundled Savannah and myself up a bit more and we sat outside until 7 and finished passing out candy! I really think Savannah enjoyed passing candy out just as much as getting it!

Also, this year we let Savannah paint pumpkins that we got from the pumpkin patch while my mom was here. She had fun and was satisfied with that rather than carving pumpkins!
Overall it was a really good Halloween!

Scarlett is crawling!!

Yesterday is when we officially saw her crawl! Her motivation....PLAYDOH!! Savannah and I were on the floor playing playdoh and Scarlett was across the room playing on the floor in front of where Shawn was sitting, next thing we know her chunky butt was on all fours inching her way closer and closer to us! It was SOOO CUTE!! Well cute up until her sneaky self got the tiniest piece of playdoh and tried to choke on it! ugh! I am in for a world of trouble!

So today I was in the craft room doing a few things on the computer and Shawn put Scarlett in the middle of the room with a bucket of toys because he was headed back to work, it was a little too quiet so I turn around and see this:


She was just sitting there holding onto the little bag. lol!
I asked her what she was doing and....




She was so proud and tickled about holding onto this bag! I, on the other hand, while tickled myself at how darn cute she is, kinda got a little sad. She is growing up too fast...I mean WAY too fast. Scarlett has been the most amazing baby and I don't want her to change yet!!

I'll have to post a video of her crawling because it's just too cute!

SYTYCD!!

I am WAY behind in blogging! The weekend of Sept 24th we headed to Kansas City to see the So You Think You Can Dance tour show! My in laws met us there to watch the girls and Shawn and I went to dinner and the show ALONE! It was awesome! We watched the entire season and loved it. This was our first season to watch SYTYCD but we will def. be following from now on!



It was so much fun seeing all the dancers that we have been following on TV dance the awesome routines live!

This might be a new tradition for us! Just loved it!

Cat update...

As per my previous post, we have been dealing with Sara peeing on the floor daily (if not multiple times a day) since we moved here. Yeah that's almost a year of cleaning up piss almost EVERYDAY! It has really made me dislike my cat. Well, we ended up picking up a storage tote like in the picture. Shawn cut a "door" out and we replaced her old litter box with it. The next morning there was pee on the floor. I was pissed! (pun not intended)

So, as a last ditch effort we ended up taping the piece back on the bin where the hole was cut out, turned it around so that part faced a wall, and this morning, for the first time in I don't know how long, Sara peed inside the litter box!!!

Seriously I can't tell you how nice it was to go into the bathroom and not have to clean up cat piss! The cat is 9 years old so using a litter box is not a new concept!!

I am not, however, getting too excited just yet. Hopefully this trend continues and we don't have anymore problems but I swear if she starts peeing on the floor anymore she is going to kitty heaven a lot sooner than planned!!

I guess it's come to this....

Ever since we moved here to Nebraska and my cat will not go outside and use the bathroom anymore we have had a constant issue of her "missing" the litter box. Sara is part Mane Coon as far as we can tell so she is a little bit of a bigger cat. Well, her current litter box isn't quite deep enough and she prefers to back right up to the side of the box and pee...well this is a problem! With her being bigger and the litter box not deep enough she is constantly peeing over the side!! Yes that's right..she gets in the litter box and then pretty much hangs her butt over and pees! Every morning and sometime multiple times a day we are spraying 409 and cleaning up cat pee...it's gross! I just did a google search on deeper litter boxes and came across this!


Yep..this is Shawn's DIY project for this weekend! If this isn't deep enough to keep her from peeing outside the box, I don't know what we are going to do!

Fundraiser...

Last Thursday we went to Savannah's new preschool for 'meet the teacher/back to school' night or something like that. Well when we got Savannah's folder with all the info for the year in it, it also contained a thick packet which is their "first of the year fundraiser." It's Yankee Candles. Seriously? Fundraiser for preschool? I think it's stupid. I hate fundraisers! I can't stand guilting people into buying over priced crap so the school can make a little money. I would honestly rather just make a donation towards whatever they are trying to raise money for than ask people to buy something they can get in the store for cheaper!

Yeah, I'm a lame mom who won't be participating in the fundraiser...oh well.


BTW the only "fundraiser" I approve of is Girl Scout Cookies!!! lol!

And you know, while we're on the subject..I also really, really hate all of the "pampered chef" "party lite" "tastefully simple" type parties. I avoid them at all cost because I either end up buying something out of guilt that I will never use or didn't need, or will feel guilty not buying something for the exact same reasons. I don't own any Pampered Chef crap and don't feel like I am missing out on anything. I am perfectly happy with my chefmate target crap and I don't need Tupperware to store my leftovers...ziplock is just fine for me!
